The yellow pitahaya has a bright yellow thick scaly skin. The fruit is smaller than the red and pink variety.
The flesh of the yellow pitahaya is white and contains many small black edible seeds. The flesh is juicy and sweeter than the flesh of the other pitahaya varieties.

How do you eat a yellow Pitahaya?

Place the dragon fruit on a clean cutting board. Using a sharp knife, cut in half lengthwise down the middle. Slide a spoon in between the skin and the flesh (like you might do for an avocado or kiwi). Scoop out the flesh and repeat for the other half
